the SSP is not a “sampler” in the sense that out of the box you just assign samples to MIDI keyboard keys and that is what it does and nothing else.
The SSP is a full modular synth. You can build anything you can imagine in the SSP’s patcher grid but of course you have to do it … and there is a preset collection to help you on your way here in the forum. The preset collection has lots of patches with midi modules in combination with samplers, wave oscillators, etc. And there are also patches demonstrating the switcher module (SWI).
the reason the MIDI module outputs pitch CV as 1v/oct is so you can send it out of the SSP to control other stuff. And modules in the SSP accept 1v/oct so they are compatible with the outside eurorack world.
I suggest you look at the SWI module which lets you route gates to different gate inputs of the sampler module depending on the pitch CV signal from the MIDI module, like I said. If you want to scale that pitch CV signal you could use the VCA module in the SSP. If that doesn’t work for you maybe you could use multiple MIDI modules’ gate outputs, and put the keys on different MIDI channels (?).
